    Bruscetta is very easy.

Slice a baguette and brush with olive oil. lay slices on a baking sheet and toast in the oven until pale golden. While still warm, rub each slice with a cut clove of garlic.

    For a tomato topping:
Peel, seed and dice 4 large roma tomatoes
Mince 8 large fresh basil leaves
Peel and crush 1 large clove of garlic
Combine the tomatoes etc in a bowl, sprinkle with sea salt and black pepper to taste and add extra virgin olive oil. Mix well. Spoon on bread slices and enjoy.
