    Olive Garden Zuppa Toscana

    This is a much requested recipe on this site, given its name! Someone who used to work at the Olive Garden sent in the original recipe, which I’ve adapted to serve 6-8. Try it, it is really yummy!

    P.S. To be honest, this recipe isn’t very "Tuscan". It is a very good soup and hits the spot on cold winter days. I’ve included this and a few other Olive Garden-inspired recipes on the site for all of our visitors that enjoy eating at this restaurant chain, I think making these recipes at home make them even better! :)

    Makes: 6-8 servings
    INGREDIENTS

    * 1 lb ground Italian sausage
    * 1½ tsp crushed red peppers
    * 1 large diced white onion
    * 4 Tbsp bacon pieces
    * 2 tsp garlic puree
    * 10 cups water
    * 5 cubes of chicken bouillon
    * 1 cup heavy cream
    * 1 lb sliced Russet potatoes, or about 3 large potatoes
    * ¼ of a bunch of kale

    1. Sautee Italian sausage and crushed red pepper in pot. Drain excess fat, refrigerate while you prepare other ingredients.
    2. In the same pan, sautee bacon, onions and garlic for approxiamtly 15 mins. or until the onions are soft.
    3. Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling.
    4. Add potatoes and cook until soft, about half an hour.
    5. Add heavy cream and cook until thoughouly heated.
    6. Stir in the sausage.
    7. Add kale just before serving. Delicious!

    Here’s a link to a copy cat recipe below. I just had the real thing Wed. at lunchtime with friends. It’s sooo good. This recipe looks like it would be really close.

    Italian Sausage Soup:

    1 lb sweet Italian sausage, casings removed
    1 cup white rice
    1 cup chopped tomatos in puree
    1/2 lb chopped frozen spinach, thawed and drained
    6 cups beef broth
    1/4 tsp black pepper, ground
    Pecorino Romano cheese for garnish

    Cook sausage in a soup pot until cooked thru. Add tomatos, broth, rice, and black pepper and bring to a simmer. Cook 12-15 minutes or until rice is tender. Stir in chopped spinach and let simmer. Ladel into soup bowls and garnish with cheese
